How tip-outs are usually figured

Most restaurants set tip-outs as a percentage of a server's sales rather than of their tips, so that a low-tipping table doesn't shortchange the support staff. A common setup is around 1–3% of sales to bussers, about 1% to the bar and around 1% to the host, but every house sets its own numbers. Some tip out a share of tips instead.
